Wild African Soul: Sorghum Farmhouse Beer is a remarkable collaboration between Soul Barrel Brewery and Tolokazi. This brew reimagines traditional sorghum beer by marrying European barrel ageing techniques with African sour mashing and natural fermentation methods. The result is a beer unlike any other, with layers of creamy pear, jammy fruit, citrus, and honey that melt into a funky, dry barrel character. The earthy notes of sorghum grain are beautifully balanced by a lively acidity, making this beer a truly unique experience.

This limited-release beer is the product of intricate brewing processes and expert blending. We started by brewing a batch of Umqombothi, using a traditional sour mash and allowing it to ferment spontaneously on the grain. After straining, the beer was blended into a barrel with a European farmhouse ale, which had undergone spontaneous, open fermentation. For the final touch, the beer was fermented with Brettanomyces and blended with a three-year-old, fruity Brett beer, resulting in a complex, multi-layered flavour profile.

Only available in bottles, Wild African Soul is a modern twist on a classic, offering a one-of-a-kind taste experience that celebrates both African and European brewing heritage.
